Strawberry Balsamic Pork Chops

This is a meal we had that was really good. It tasted like a fancy restaurant meal.

6- (4oz) boneless center cut pork chops
1/2 tsp salt
1/2 tsp pepper
2 cloves minced garlic
1 tsp rosemary
1 Tbl olive oil
2 cups sliced strawberries
1/4 cup balsamic vinegar
2 Tbl honey

  • Sprinkle pork with salt and pepper. Rub in garlic and rosemary.
  • Heat oil to med-high
  • Cook pork chops a couple minutes on each side or until done.
  • Remove from skillet and keep warm.
  • Add strawberries, vinegar, and honey to skillet.
  • Cook, stirring occasionally until the sauce is slightly thickened.
  • Place pork chops on plates and top with strawberry mixture.
1 can cut green beans
4 slices bacon, chopped
4 cloves minced garlic
salt and pepper to taste
  • Preheat oven to 400*
  • Toss all the ingredients into a baking dish coated with cooking spray.
  • Bake 13 minutes until crisp tender.

Chocolate Chocolate Smoothie

Chocolate Chocolate Smoothie
One of my favorites for breakfast, lunch, or post workout.

1 cup milk of choice
1 Tbl dark chocolate peanut butter
1 scoop chocolate protein powder
4 ice cubes

Blend and enjoy. I use a Magic Bullet

I'm Back...Sort of

     It's been a long time since I've posted. Truthfully, I haven't really missed blogging. But, I use my blog a few times a week to look up recipes. It's easier than flipping through a cookbook, and especially easier than looking through a recipe box. In the time since I last posted, I've eaten some good food. I didn't write down that I liked it, and now I'm wondering,"Hey, how did I make ___ ? It was really good." So, I'm back. I'm not sure how often I'll post. I'm not sure I'll even write much. But, I want to keep my online cookbook up to date. This time I'm truly doing it for me; for my personal reference. I'm not even sure I'll post pictures. If you like what you see, follow. If you don't, that's OK too.

     What about restoring? Simplifying?

     In the time since I last posted, I joined emeals. Really, a food blogger joins emeals? It's true. I mentioned before that I really just wanted to simplify life. I still do. Emeals is simple. Instead of spending over an hour planning my menus, I just click the app on my phone and it's done...mostly. Some weeks are better than others. Some weeks, I still plan my entire menu. Other weeks, I eat as directed. Sometimes, I regret the year subscription I got from Groupon. Sometimes, I'm so glad that I don't have to worry about what we will eat.

     I've also started using a personal hobby to escape. This saves me from becoming Crazy Mommy. I've always loved sewing, and I've recently gotten into crochet. I use these hobbies to make things (dresses, scarves, aprons, etc) for my friends and to give as gifts. If you would like to see some of my projects, check out Princess Ee's on Facebook or Etsy.

    So what is this? It's Robin, restoring life. Simple. Non-structured. Irregular. For me!
